Quick Balls

These are a great quick snack, high in protein and a sweet treat.


Ingredients:


2 cups quick oats (I use gluten free)

1 cup unsweetened shredded coconut

8 tablespoons of nut butter (I use almond but mix it up or use your favorite)

5 tablespoons maple syrup (use the real stuff)

2-4 tablespoons water

1/4-1/2 cup chocolate chips (I use the darker the better)


Directions:


Mix oats and coconut together.

Add nut butter, maple syrup and water. Start with 2 tablespoons and add more if needed. You want them to be sticky enough to roll into balls. Add chocolate chips.

Form into 1 inch balls on parchment paper.

I put them in layers of parchment paper in an air tight container and freeze them.

When you want to eat them just take out for 1 minute and they will be soft enough to eat.
